My grandma on my dad's side was born and raised in Virginia until she was 19 and moved to Texas and spent the rest of her life there. She's still alive, but y'know. She's not going anywhere.
She's always made the BEST food. And one of my favorite things was her Breakfast Mash. It's basically eggs mixed with other things that you like. In my case, what I'm eating right now, is scrambled eggs mashed with potatoes, cheese, and bacon. It's so delicious.
What you do:
Take one potato and pop it into the microwave for a few minutes, until you can stick a fork in and it slides out easily. Then, take it, cut it in half the long way, cut those two halfs in half the long way, and cut them into large chunks. Save for later.
Take two eggs, scramble in a bowl, pour in just a little bit of milk to make it fluffy, mix again. Pour into pan.
Take all your potato chunks and put it with the eggs. Take some cheese and sprinkle as much of that as you want on top.
You can either have cooked bacon that you broke into pieces or use bacon bits in a bag. I used bacon bits. Throw that in there too.
Now cook it until the eggs are your level of satisfying. For me? Dry. I like to put a little bit of seasoned salt on the final product for extra flavor. Eat as is. It's really good.

It's REALLY good if you just want a taste of "southern food". There's just something about it that tastes like summers spent in the country.
