is it more correct to call someone 'lesbian' or 'a lesbian'
like, I feel like if we're talking about a female equivalent of 'gay' it makes sense for it to be an adjective, because you don't call someone 'a gay' you just call them 'gay'
but I've heard people refer to others and themselves as 'a lesbian' so I'm not sure what's more appropriate to use, or if the part of speech even matters at all

If you have to refer to them by their sexuality, consider what you've heard them say. If you have heard them say, "a lesbian", use that. If you haven't, assume just "lesbian". There is no universal agreement for it, and always let people know they are free to correct you.

dont know if this is a stupid question but whats the difference between lesbian and a lesbian? does it actually mean something or just which sounds better in a sentence, as in correct way to refer as?

You could kinda say that "A lesbian" uses the word as a noun while lesbian alone can be used as an adjective. A lesbian is a woman who is attracted to another woman while lesbian refers to the actual sexual identity of the woman.

I have always just said "a lesbian" LOL One of my friends is a lesbian and saying "You're lesbian" always sounded weird to me idK

And no difference Gen! Same thing, different way of saying it basically haha.
